  1. Put half the butter into a hot pan and fry the Paris mushrooms after trimming and slicing them.
  2. Put the rest of the butter into a large pan, add the buckwheat pancake and let it brown.
  3. Add the slices of ham and the sautéed mushrooms to the centre of the pancake.
  4. Spoon on the Boursin® Professional.
  5. Break the eggs over the top and mix lightly.
  6. Fold the edges of the pancake without covering the entirety of the filling.
