The French 2 Michelin starred chef Jean-François Piège gives the traditional tiramisu a twist by adding matcha and using Kiri® Professional Bloc instead of mascarpone. Matcha is a green powder tea from Japan and China. This superfood full of antioxidants offers a healthy alternative to coffee.

Ingredients
- 500 g Kiri® Professional Bloc
- 500 g fresh cream
- 5 eggs
- 150 g caster sugar
- Pavesini cookie
- 5 g Matcha powder
- 40 g Matcha powder
Preparation
- The day before, mix the Kiri® Professional, fresh cream, eggs and sugar using an electric mixer. Emulsify until it reaches the ribbon stage.
- Dip the Pavesini ladyfinger cookies in the Matcha tea, then spread in a layer in the bottom of a baking dish.
- Cover the biscuits with a layer of tiramisu mixture. Then repeat, alternating cookies and cream and finishing with a layer of tiramisu cream.
- Chill in the refrigerator for 12 hours.
- Sprinkle with Matcha powder before serving.
