Matcha tiramisu

The French 2 Michelin starred chef Jean-François Piège gives the traditional tiramisu a twist by adding matcha and using Kiri® Professional Bloc instead of mascarpone. Matcha is a green powder tea from Japan and China. This superfood full of antioxidants offers a healthy alternative to coffee.

Ingredients

  • 500 g Kiri® Professional Bloc
  • 500 g fresh cream
  • 5 eggs
  • 150 g caster sugar
  • Pavesini cookie
  • 5 g Matcha powder
  • 40 g Matcha powder

Preparation

  1. The day before, mix the Kiri® Professional, fresh cream, eggs and sugar using an electric mixer. Emulsify until it reaches the ribbon stage.
  2. Dip the Pavesini ladyfinger cookies in the Matcha tea, then spread in a layer in the bottom of a baking dish.
  3. Cover the biscuits with a layer of tiramisu mixture. Then repeat, alternating cookies and cream and finishing with a layer of tiramisu cream.
  4. Chill in the refrigerator for 12 hours.
  5. Sprinkle with Matcha powder before serving.
